This decision comes up constantly on ground-floor renovations: a kitchen and dining room separated by a wall with a door, and a client wanting them to feel more connected. The two routes look similar on a plan but are very different jobs.
One removes the wall in its entirety and spans the full width with a beam. The other keeps a section of wall standing and simply makes the existing opening larger.
The structural difference
Removing a wall completely means the new beam has to span the full width of the room, picking up everything the wall was carrying — often a floor above and part of the roof.
Widening an opening leaves the end sections of wall standing to act as piers, which shortens the span the beam actually has to cover and usually reduces its depth and cost significantly.
Disruption on site
A full wall removal is a bigger, dustier job — more temporary propping, more make-good to floor, ceiling and skirting where the wall used to be, and a longer period with the house partly open to the elements or to dust sheets.
Widening an opening is contained work in comparison. The existing wall either side stays largely undisturbed, which keeps the mess and the programme down.

What you actually get to live with
Full removal gives genuine open-plan light and sightlines, but it also removes any acoustic or smell barrier between kitchen and living space — cooking noise, TV noise and washing machine noise all travel freely.
A widened opening still separates the rooms enough to close a door if one is fitted, or at least to break sightlines and sound a little, while giving most of the visual connection people are after.
What the structural calculation must cover
Both routes need an engineer to size a beam and specify the padstones or piers it bears on, but a full removal calculation also has to check the loading path all the way down through the remaining structure to foundation level, since more of the floor above is now carried by fewer points.
A widened-opening calculation is often simpler because the retained piers already have an established bearing, but it still needs checking against the actual masonry left standing, not just assumed from the drawings — old walls are rarely built exactly to the dimensions shown on a plan.
When widening is clearly the wrong answer
If the brief genuinely calls for one open room rather than two connected rooms — a kitchen-diner meant to be used and seen as a single space — a widened opening will always look like a compromise, however well it's built, and full removal is the only route that delivers the brief.
Widening also stops making sense where the retained piers would end up so narrow or so close to a corner that they add cost and disruption without giving back much useful wall space, at which point removing the wall in full is often the more sensible job for similar money.

Does widening an opening still need Building Control involvement?+
Yes — any alteration to a load-bearing wall, however small the resulting opening, needs a structural calculation and Building Control sign-off in the same way full removal does.
Can I go back and remove the rest of the wall later?+
Sometimes, if the piers were built with a future full-span beam in mind, but usually not without redoing the structural work — it's worth deciding on the end goal before the first job starts rather than doing it twice.
Which option adds more value to the house?+
Full open-plan tends to be what buyers expect in a family home today, but a well-proportioned widened opening that still offers a closable kitchen is genuinely preferred by some buyers who want to shut cooking smells away — it isn't a one-way bet.
