How to tell if a wall is load-bearing
As a rule of thumb, walls running perpendicular to floor joists, walls with joists sitting on top of them, and walls directly above another wall on the floor below are more likely to be load-bearing, but this isn't reliable enough to act on without a proper structural assessment. We check the roof and floor structure above the wall in question, not just the wall itself, before confirming anything.
Some walls carry roof loads even though there's no floor above them, and some walls that look structural are actually just thick partition walls with no load path through them at all — you genuinely can't always tell by eye.
The structural engineer's calculation
A structural engineer calculates the size of steel needed based on the span, the loads it's carrying (floor, roof, snow load, any water tanks or heavy fittings above), and the bearing it needs at each end. This produces a structural calculation and a drawing that building control will want to see, and it's not something to skip even on a short span — the cost of the calculation is small next to the cost of getting the beam size wrong.

Temporary propping: keeping the house standing while the wall comes out
Before any of the wall comes out, temporary support (acrow props on sole plates, spanning needles through the wall where needed) goes in to carry the load the wall was carrying. This has to stay in place until the new steel is properly bearing and padstones or plates are set, which can take a day or two depending on how the ends are being built up.
This stage takes real skill and experience — badly positioned props, or props removed too early, are how walls crack, ceilings sag, and in the worst cases, how structural failures happen. It's not a stage to have done by anyone without proper structural alteration experience.
The steel itself and getting it into position
The beam's size and weight depend entirely on the engineer's calculation — a short span in a single-storey extension is a very different beam to a long span carrying two storeys and a roof. Getting the steel into the house, particularly into an older cottage with low doorways and narrow hallways, sometimes means it has to be brought in through a window opening or lifted in before a roof goes on, which is a practical access issue worth discussing early, especially in Wealden farmhouses and terraces with tight internal access.
Padstones or concrete pad foundations are usually needed under each end of the beam to spread the load into the wall below, particularly on older masonry that wasn't built to take a point load in the first place.

Finishing: the part that's easy to underestimate
Once the steel is in, it needs boxing in with plasterboard (sometimes with fire-rated board depending on its location), the ceiling and walls either side need making good, and often the floor needs patching where the old wall's footprint has been removed. On period properties with decorative cornicing or picture rails, matching these across the new opening is a specialist plastering job in its own right and worth budgeting for rather than treating as an afterthought.
